Equipped with 3 1/3 GN containers with a depth of 10 cm, you can melt chocolate quickly and easily without it burning. This chocolate melter works on the au bain marie principle, which means heated water ensures the chocolate melts evenly.
Three 1/3 GN containers
This stainless steel chocolate melter is equipped with 3 pieces of 1/3 GN containers and matching lids. It has 4 rubber feet, keeping it firmly on the surface. The display is easy to operate and consists of an on/off button and a digital temperature controller. You can use the arrow buttons to set the desired temperature and the digital display lets you keep a close eye on the heating progress. The temperature is adjustable per single degree from 3 to 412°C. The chocolate melter is fitted with a tap, with which you can easily empty the chocolate melter. The chocolate melter also has a steam discharge valve. The steam created by heating the water can thus be easily drained from the appliance.
Melting chocolate
The chocolate melter is easy to use. Fill the water tank with water and make sure the water level is between the minimum and maximum lines. Then place the three GN containers in the chocolate melter. The chocolate melter has two intermediate bridges, which ensure that the GN containers stay in place and do not float away. Next, turn on the chocolate melter and set the desired temperature using the arrow keys. An indicator light on the display shows when the desired temperature has been reached. When the chocolate melter reaches the right temperature, you can put around 4 kilos of chocolate in each GN container. Stir the chocolate occasionally and wait until the chocolate is sufficiently melted. Then you can remove the GN container from the chocolate melter with protective gloves. Beware of water droplets that may still hang at the bottom of the GN container. These are hot and if this water comes into contact with the chocolate, lumps will form in the chocolate.
Melted chocolate
For melting chocolate, dark and milk chocolate are the easiest to melt. White chocolate is more difficult to melt, as it burns a bit faster. At a temperature of 36°C it can already burn, but with this chocolate melter you can accurately adjust the temperature. For melting chocolate, you can buy special melting chocolate. These are often chocolate drops (also called callets). But you can also cut a bar of chocolate into pieces and heat it. The important thing is to melt chocolate slowly and evenly. With this chocolate melter, this is easy to set.
Cleaning the chocolate melter
Once the chocolate melter has cooled down, you can clean it. Make sure the plug is out of the socket and remove the GN containers from the chocolate melter. Close the steam drain valve. Make sure there is a drain hose attached to the drain valve or place the chocolate melter by the sink so that the water can drain this way. Open the water drain valve and drain the chocolate melter. Wipe the outside and inside with a soft, damp cloth and dry the entire machine thoroughly. Clean the GN containers and lids with warm water and a mild detergent. When the containers and lids are clean, dry them well to prevent mould or corrosion in the gastronorm containers.
